- How do variety and year of harvest affect gelatinisation temperature? In this study, undertaken in collaboration with Dr Sarab Sahi of the Baking and Cereal Processing Department at CCFRA, differential scanning calorimetry has been used to compare the gelatinisation characteristics of malts made from a selection of barley varieties from the 2006 and 2007 harvests.
